Chicken Salad

Ingredients for this Ketogenic Chicken Salad :

Meat

  • 1 Chicken breast (approx. 200g)

Produce

  • 14 Blueberries (approx. 35g)
  • 2 tbsp Cilantro
  • 1 Lettuce leaves to serve with
  • 1/4 Onion
  • 1/2 Red bell pepper (approx. 100g)
  • 1/2 Zucchini or cucumber (approx. 50-70g)

Canned Goods

  • 1/4 cup Coconut cream

Baking & Spices

  • 1 tbsp Curry powder
  • 1 Salt

Oils & Vinegars

1 Coconut oil to cook with

 Nuts & Seeds

  • 1 tbsp Pumpkin seeds

Instruction:

  1. Cook the diced chicken in 1-2 tablespoons of coconut oil until the chicken pieces are fully cooked.
  2. Place the cooked chicken pieces into a bowl and let cool for a few minutes.
  3. Add into the bowl the diced bell pepper, cucumber/zucchini, pumpkin seeds, blueberries, and optional cooked onion pieces.
  4. Mix in the coconut cream, curry powder, salt to taste, and chopped cilantro.
  5. Serve with lettuce leaves or enjoy by itself.
